October 10, 2018 I made this wonderful Healthy Whole Wheat Banana Bread this afternoon, per request from Steve, one of our faithful customers. Our Carrot Cake Muffins have been his favorite, and he has been ordering a dozen at a time the past two weeks. He has been requesting some banana bread so today when he called he said he would like some next Tues. when we are at Westgate Mall. I told him I would have to find a recipe that doesn't use white flour or white sugar. He asked me why I wouldn't use that, and I told him there is no food value in white sugar or white flour. It isn't healthy. That's why I use 100% whole wheat flour, that I mill directly from the wheat grain, and honey as sweetener. I used part honey and part coconut sugar in this recipe. Coconut sugar has a low glycemic index and has vitamins and nutrients in it unlike white sugar. The honey and coconut sugar does not overpower the sweetness of the bananas in this recipe. The flavor of the bananas "shines" in this bread. Some people would expect this bread to be dry because of the whole wheat flour, but it is not. The ingredients are: unsweetened applesauce, honey, coconut sugar, vanilla extract, almond milk, eggs, bananas, whole wheat flour, baking soda, cinnamon, slat, walnuts.
So this banana bread will be added to our product line and we will have it next Tues. at Westgate Mall. I will make the larger loaf size and also a mni
loaf. There are walnuts in the bread and I know there are people who can't eat nuts these days, so I will make some without any.
My husband, Skee, and I both enjoyed tasting this bread this afternoon, and he says a big "thank you," to Steve for requesting it.
